🍖 The Finest Black Pork from Kagoshima

Our shabu-shabu features Kokuhōton, a luxurious black-pork brand raised in Kagoshima Prefecture. These pigs are carefully nurtured on a nutritious fermented-moromi diet, giving the meat a remarkably rich flavor and a natural sweetness that melts in your mouth. The fat is clean and delicate, with a subtle aroma that enhances every bite — an unmistakable mark of quality.

🍲 Authentic Kagoshima Broth and Sauce

To bring out the full flavor of this exquisite meat, we use a special broth made from “Honkarebushi” — the highest-grade bonito flakes from Makurazaki, Kagoshima. The broth is blended with a mellow hon-kaeshi (a mix of sweet soy sauce, mirin, and sugar) and served with Yuzukoshō— a handcrafted citrus-pepper condiment from Nishi Shuzō Brewery.Together, they create the perfect balance of depth, sweetness, and refreshing spice — truly, authentic Kagoshima shabu-shabu.
